Pommes souffle, or potato slices that are twice-fried so that become delicious little crunchy pillows, are indeed an irresistible Gallic treat. Unfortunately, they're also time consuming to make, which is why you don't see them around much anymore. One place that still does them is Au Boeuf Couronne, the steak house in the 19th arrondissement.
